Short answer
It depends on the fruit. A manual or electric citrus juicer suits lemons, limes and oranges, and automatic-feed citrus machines take whole fruit for high-volume fresh orange juice. A centrifugal juicer handles apples, carrots and other hard produce quickly. A cold press or masticating juicer suits leafy greens and works more slowly, with less foam.
For a bar squeezing limes and lemons to order, an electric citrus reamer or a lever press is usually enough. An automatic citrus machine makes sense when fresh orange juice sells in volume.
Centrifugal juicers are fast but whip air into the juice, so it foams and separates sooner. Cold press machines take longer and need more cleaning but tend to extract more from greens.
Count the cleaning time. A juicer that is slow to strip down at close tends not to get cleaned properly on a busy night, so look at how the parts come apart and whether they are dishwasher-safe.
