Short answer
Most commercial espresso machines, especially two- and three-group models, are plumbed into a cold water line and a drain. Smaller pour-over models with a built-in reservoir exist for low volume or mobile service. Plan the water supply, the drain and a water filter or softener before the machine arrives.
Scale from hard water is a common cause of espresso machine problems. Manufacturers generally recommend water treatment matched to your local water hardness, and some warranties exclude scale damage, so read the terms before installing.
Larger machines usually need a dedicated circuit at a higher voltage than a standard outlet provides. Check the voltage, phase and amperage on the spec sheet against your electrical panel before ordering.
Leave room beside the machine for the grinder, a knock box and cups, and make sure the counter can carry the weight of a multi-group machine.
