Short answer
A sheet pan rack is a tall, usually mobile frame with slides that hold pans level, so a kitchen or bakery can stage, cool, proof or store many pans in one footprint. Racks differ by height, slide spacing, whether pans load from the end or the side, and whether they are sized for sheet pans or steam table pans.
Closer slide spacing holds more pans but leaves less room for tall items such as cakes or proofed loaves. Wider spacing holds fewer pans with more clearance.
A rack meant to roll into a roll-in oven, proofer or blast chiller must match that unit's dimensions, so check the equipment's specs before ordering. Casters with brakes and a fitted cover are worth having on racks that move through the kitchen or hold proofing dough.
