What gauge stainless steel is best for a work table?

Short answer

For most prep, 16-gauge stainless is a sound choice; choose 14-gauge for heavy work such as holding countertop mixers or slicers, butchery or working dough. 18-gauge suits light duty like plating or staging. With steel, a lower gauge number means thicker metal, so 14-gauge is thicker and stiffer than 18-gauge.

Gauge is only half the question. The grade of stainless matters too: type 304 resists corrosion better than type 430, which counts near sinks and in wet or salty prep areas.

Check what is under the top. Reinforcing channels, the number of legs, crossbracing and an undershelf all affect how much weight the table carries, and the manufacturer's load rating is the figure to go by.

Add a backsplash where the table sits against a wall, so food and water do not fall behind it. An island table does not need one.
