What size commercial mixer do I need?

Short answer

Choose a mixer by the largest batch you make, checked against the manufacturer's capacity chart for that product, not by bowl size alone. Bowl capacity is usually stated in quarts, sometimes litres; countertop models suit small bakeries and cafes, while floor models handle larger batches. Heavy or stiff doughs need a bigger machine than the same weight of batter or cream.

Capacity charts list the maximum batch for each product, often by weight of flour or finished dough, and tie dough capacity to its water content, called the absorption ratio. Lower absorption means stiffer dough and a smaller safe batch.

Overloading is a common cause of mixer breakdowns. If you regularly run the machine at its limit, size up, or split the work into more batches.

Check the power supply too. Larger floor mixers often need higher-voltage or three-phase power, so confirm what the building supplies before you order.
