Is a gas or electric fryer better for a restaurant?

Gas fryers are the usual choice for high-volume kitchens that already have gas service, while electric fryers suit countertop use and buildings without gas. Most electric models heat the oil through elements immersed in it and need no gas line or flue. Neither is better everywhere, so let your utilities, volume and space decide.

Electric fryers transfer more of their energy into the oil, because the elements sit in it, while a gas fryer loses some heat up the flue. Which is cheaper to run depends on your local gas and electricity rates, so compare them for your own site.

Large electric fryers often need 208 or 240 volt power, and some need three-phase, so check the building's service before choosing. Gas fryers must match your gas type, natural gas or propane, and are connected by a licensed gas fitter.

Either way, a fryer normally goes under a hood with fire suppression. Your local building department and fire authority decide the exact requirement.
