Fryers are simple, hard-working machines, which makes a used one a smart buy — if the fry pot is sound. A cracked or heavily pitted pot is a deal-breaker; almost everything else is serviceable.
Inspect the fry pot first
Drain and look inside the pot for cracks, deep pitting or weld repairs, especially around the cold zone at the bottom. A compromised pot can leak hot oil — a safety hazard you can't fix cheaply. Surface discoloration is normal; structural damage is not.
Check the drain valve opens and closes cleanly and that the basket hangers and baskets are present. Missing baskets are a small cost, but a seized drain valve means the pot has been neglected.
Gas or electric is a utilities question, not a taste one
Gas fryers recover faster and cost less to run in most of Canada, but they need a gas line sized for the BTU rating and a hood with the right make-up air. Electric fryers are easier to place and often more efficient, but a three-phase unit needs a circuit you may not have.
Confirm what your space can actually supply before you fall in love with a model. Retrofitting gas or a 3-phase circuit routinely costs more than the fryer.
Test the thermostat and the safeties
Bring the fryer up to a set point and check the actual oil temperature with a probe. A thermostat drifting more than about 15°F will burn or undercook product all shift. Thermostats are replaceable, but you want to know before you buy, not after.
The high-limit cut-off is the safety that matters most. It should trip and stay tripped until reset — a bypassed or defeated high-limit is a reason to walk away from the unit entirely.
Check before you buy
- Fry pot is free of cracks, deep pitting and weld repairs
- Burners light evenly, or every element heats
- Thermostat holds within ~15°F of set point
- High-limit safety cut-off trips correctly
- You can supply the right gas line + venting, or the right circuit
- Baskets, and the drain valve, are present and working
