Where used almost always wins
Stainless work tables, shelving, sinks, simple gas ranges, mixers and basic refrigeration are simple, durable and cheap to service. Buying these used routinely saves 40–60% with little downside, because there's not much to go wrong that a technician can't fix quickly.
Where to be careful
Complex electronics — combi ovens, high-end espresso machines, anything with a circuit board — carry more risk used, because board-level repairs are expensive and parts can be scarce. Here, condition, service history and a warranty matter far more than the discount.
Think in total cost of ownership
A cheap unit that needs $800 of service isn't cheap. Weigh the purchase price against likely repairs, energy use and how long you'll keep it. A tested-working, inspected used unit with a short warranty often beats both a risky bargain and a full-price new machine.
