An FWE PHU-12P insulated proofer and heated holding cabinet with 12 adjustable stainless steel proofer slides and pass-through doors, for bakeries, schools, hospitals and restaurants.
Mechanical proofer controls run the heat and humidity, so the same cabinet proofs dough and holds hot food, and staff fill it from one side and take product out from the other through the gasket-sealed doors with SaniGuard handles. It rolls on 5" EZ Roll heavy duty poly casters and carries Energy Star, NSF, UL, CUL and CE approvals.

The PHU-12P offers all the benefits of the standard PHU-12, with the added functionality of a pass-through design for efficient back-of-house to front-of-house workflows. This unit allows access from both sides, streamlining loading and service in high-volume kitchens. It holds up to (12) 18" x 26" sheet trays or (24) 12" x 20" steam table pans.
