Description
Insulated heater proofer with a door on each side, so the kitchen loads from one side and orders are handed out from the other, for delivery and mobile-order pickup. It proofs dough at up to 95% relative humidity at 110°F and holds hot food at up to 180°F, with forced air for even heat.
The cabinet is wide enough for boxes up to 24″, so large pizza boxes fit. Four removable wire racks at 3″ runner spacing hold up to 16 pans (18″ x 26″, 24″ x 24″ or 20″ x 12″) or to-go boxes.
