The wells heat with direct elements, so they need no water or drain, and take full-size pans 6.5" deep, 12" x 20", GN 1/1 or 18" x 13" trays. Below, 4 gasket-sealed stainless doors with magnetic work flow handles close heated compartments held at 90°F to 190°F by radiant heat on 28 fixed slides for 12x20 pans, and each well and compartment has its own thermostat.
