Pan racks, also called bun pan or sheet pan racks, hold sheet pans on rows of slides in a mobile frame, so trays move from the bench to the proofer, oven, cooler or holding area without handling each pan. Bakeries, pastry kitchens, caterers, cafeterias and banquet operations rely on them. Full-height, half-height and countertop sizes are common, in aluminum or stainless steel, with end-loading or side-loading slides.
