Wok ranges are high-output ranges, mostly gas, built around round wok openings, designed for the intense, concentrated heat that stir-frying needs. Chinese, Thai, Vietnamese and pan-Asian restaurants use them, along with any kitchen cooking wok dishes at volume. They are sold by the number of wok stations, and many include a swing faucet and a drain trough so the cook can rinse the wok between orders without leaving the station.
