The Berkel Volano B116A is the automated evolution of the iconic heritage flywheel slicer, engineered for supermarkets and large-scale charcuterie departments. This machine combines the aesthetic appeal of a traditional hand-painted floral flywheel with the efficiency of modern electronic automation. built from painted aluminum with stainless steel components in contact with food, the B116A delivers the speed and output necessary for intensive commercial use while maintaining the artisanal slicing build quality that prevents product bruising.
Performance is driven by a powerful motor and a high-precision 14.5″ chromed steel blade. The unit operates in both semi-automatic and automatic modes, featuring a variable speed carriage and an electronic slice counter to standardize production. A sophisticated automatic slice adjustment system works in coordination with the gauge plate to deliver perfectly straight cuts and zero product waste. The balanced flywheel design allows for manual operation if desired, offering total control over the slicing process during delicate service.
Safety and hygiene are integrated into the B116A design to meet strict commercial standards. It includes a 360° blade protection ring and an automatic shutdown feature that activates after 60 seconds of inactivity. For rapid sanitation, the stainless steel receiving tray and meat table are easily removable without the need for tools. The built-in sharpener is enclosed in a dedicated top compartment, ensuring the blade maintains a razor-sharp edge for consistent, paper-thin slices throughout the busiest shifts.
