Available in gas or wood configurations, this Italian-made unit provides a 39.4″ x 35.4″ refractory cooking floor, providing the capacity to bake 4 pizzas simultaneously or up to 80 pizzas per hour. The internal chamber is protected by 3 layers of high-density ceramic fiber insulation, allowing the oven to reach an operating temperature of 500°C (932°F) in just 50 min. while maintaining a cool-to-the-touch exterior for staff safety.
Constructed with a stainless steel dome and finished in a resilient Silver Grey powder coat, this oven is built to withstand the mechanical stress of a high-volume kitchen. The patented Double Flue System optimizes heat retention by increasing the residence time of hot air inside the chamber, which significantly reduces fuel consumption and improves baking consistency. Whether utilizing the gas burner with 102,364 BTU/hr. or traditional wood fuel, the oven delivers a rapid recovery time between batches, making it a reliable workhorse for pizzerias during peak service.
